The number 657 denotes the 65% polishing ratio and No.7 yeast used, both defining its vibrant and textural signature.

Made with Akitsuho rice (秋津穂), a local Nara variety prized for its lively acidity and umami, this sake offers juicy aromas of green apple, melon, and pear, followed by a soft effervescence and clean, mineral finish. The Manaka-dori (真中採, “middle-press”) technique captures only the most balanced portion of the sake — smooth, aromatic, and elegantly dry.
