Brewed by Kiyashou Shuzo (木屋正酒造) in Mie Prefecture, Jikon Sakemirai (而今 酒未来) showcases the brewery’s pursuit of “living flavour” — sake that evolves and breathes with time. This edition uses Sakemirai rice (酒未来), a rare hybrid developed by Takagi Shuzo (of Juyondai fame), known for producing sakes with incredible aromatic lift and elegant acidity.
Bottled as a Nama (unpasteurised) version, this Junmai Ginjo bursts with freshness and depth. Expect bright aromas of melon, pear, and muscat, followed by a juicy palate balanced by gentle sweetness and crisp minerality. It finishes long and clean — a hallmark of Jikon’s precision and natural energy.
