Brewed by Aramasa Shuzo (新政酒造) in Akita Prefecture, Cosmos “Akizakura” (秋櫻) is one of the six masterpieces from Aramasa’s annual Natural Series, which also includes Yamabuki (山吹), Suiboku (水墨), Ubusuna (産土), Tengerugi (天鵞絨 – Viridian), and Kinari (生成). Each represents a distinct expression of fermentation, water, and terroir — Akizakura, meaning Autumn Cosmos flower, embodies refinement, balance, and quiet beauty.

Brewed using the Kimoto method and fermented in traditional wooden barrels (木桶仕込み), this sake showcases Aramasa’s dedication to natural yeast, local rice, and minimal intervention.
