Produced by Joe and Lou Holyman from estate-grown fruit in Tasmania, Australia, this chardonnay comes from a vineyard planted in 1986. The grapes are carefully selected from a small block and whole-bunch pressed before undergoing a natural yeast ferment in 100% new French oak puncheons.
The profile is marked by crisp, cool acidity and a hint of saline, with notes of white peach, citrus, and nougat. The texture is chalky, adding depth to the wine's length and spice-driven finish.
