🍢Most sake tells you what rice it used.
Dassai 23 tells you how much of it was thrown away.

The number is the seimaibuai β€” the polishing ratio. Only 23% of each grain of Yamada Nishiki survives to be brewed; the rest is milled off. It is the most aggressive polishing done at scale anywhere in Japan, and it's the whole idea behind Asahi Shuzo in Yamaguchi, a brewery that abandoned traditional grades and now makes junmai daiginjo and nothing else.

This is the 1.8L format β€” the sharing bottle.

Aroma: Delicate florals with fresh, clean fruit.
Palate: Refined and pure β€” soft, precise, almost weightless.
Finish: Clean and quiet, no rough edges anywhere.

This is not a sake built on umami and grip.
It's for drinkers who want purity above all β€” where obsessive milling meets restraint.

Serve chilled in a wine glass. Delicate seafood, sashimi, or on its own.

The bottle that put modern Japanese sake on tables worldwide.
