Kanosuke Hioki Pot Still comes from where Kanosuke began.
Distilled at Hioki Distillery — in operation since 1883 and the origin point of the Kanosuke name — then matured at Kanosuke Distillery in Kagoshima. The mash runs roughly 90% unmalted barley to 10% malted, through stainless steel pot stills, before resting in ex-bourbon barrels and new American oak. Bottled at 51%.
Aroma: Toasted grain and vanilla from the new oak, with a nutty edge.
Palate: Full and oily — cereal sweetness, baking spice and dark chocolate.
Finish: Long and warming, oak spice holding on.
This is not a whisky built to blend in.
It's for drinkers who want something outside the single malt template — where shochu-country heritage meets whisky making.
Serve neat. At 51% it rewards patience more than it rewards water.
