Juyondai is the label that reset modern sake. Created in 1994 at Takagi Shuzo in Murayama, Yamagata β a brewery operating since 1615 β it arrived with fruit, sweetness and a lingering finish at a time when premium sake meant light and restrained. Soukou is a daiginjo expression: highly polished rice, brewed for aroma and finesse.
Aroma: Floral and fruit-forward, elegant rather than loud.
Palate: Smooth and polished, gentle sweetness with fine structure.
Finish: Clean and lightly perfumed.
This is not a sake for warming.
