Nanyo Jozo has brewed in Hanyu, Saitama since 1860 β a family operation making only around 250 koku of Hana Abi a year. It's separated by the shizuku method: free-fall rather than pressing, far slower and far less efficient, but it leaves the aromatics and texture intact. Availability is famously unreliable; a trip to the brewery guarantees nothing.
This is the Yamada Nishiki expression β muroka (unfiltered), nama (unpasteurised), genshu (undiluted).
Aroma: Ripe peach and melon over intense florals.
Palate: Lush and full β custard richness, pear and strawberry.
Finish: Sweet-edged, long, generous.
This is not a restrained sake.
It's for drinkers who want everything the rice will give β where the slowest method meets the most generous style.
Serve well chilled, and keep it cold β it's unpasteurised.
