Nanyo Jozo has brewed in Hanyu, Saitama since 1860 β€” a family operation making only around 250 koku of Hana Abi a year. It's separated by the shizuku method: free-fall rather than pressing, far slower and far less efficient, but it leaves the aromatics and texture intact. Availability is famously unreliable.

This is the Miyama Nishiki expression β€” muroka (unfiltered), nama (unpasteurised), genshu (undiluted) β€” a cleaner, more linear reading of the house style than the Yamada Nishiki.

Aroma: Fresh florals with ripe stone fruit behind.
Palate: Fruit-forward and complex, generous without losing definition.
Finish: Long, sweet-edged, clean.

This is not a restrained sake.
