The number is the seimaibuai β the polishing ratio. Only 23% of each grain of Yamada Nishiki survives to be brewed; the rest is milled off. It is the most aggressive polishing done at scale anywhere in Japan, and it's the whole idea behind Asahi Shuzo in Yamaguchi, a brewery that abandoned traditional grades and now makes junmai daiginjo and nothing else.
