Penfolds' flagship Cabernet Sauvignon, built the same way its Shiraz stablemate is — fruit drawn from across South Australia rather than a single vineyard, then matured in new American oak hogsheads. It has never been made every year; in vintages that don't meet the standard, Penfolds simply doesn't release it.
This is the 2005, now two decades on from harvest and well into its mature window.
Aroma: Cassis and dark fruit softening into cedar, tobacco leaf and sweet American oak.
Palate: Full-bodied and structured — tannins now resolved, fruit turning savoury.
Finish: Long and firm, oak and dark fruit together.
This is not a wine to open on a weeknight.
It's for a table that's been waiting for it — where Australian Cabernet meets twenty years of patience.
Decant an hour ahead and serve a little below room temperature. Aged beef, hard cheese, anything roasted.
Drinking now, but a bottle with this much structure is in no hurry.
