Kiyasho Shuzo didn't.

Jikon is made at Kiyasho Shuzo in Nabari, Mie β€” founded in 1818 and run by Tada Onishi, the sixth-generation owner who took over at twenty-seven and brews it himself. He describes the work as cultivating rather than making, leaving the microorganisms to do the job. Production never grew to meet the demand, and only a few dozen shops in Japan are allocated any.

Tokubetsu Junmai is the house standard: Hattan Nishiki and Yamada Nishiki rice polished to 60%, bottled at 16.5%.

Aroma: Jasmine and white flowers over ripe orange.
Palate: Light on entry, then expanding β€” melon, apple, soft rice umami.
Finish: Clean acidity with real length.

This is not a sake that announces itself.
It's for drinkers who notice what happens after the first sip β€” where minimal intervention meets total control.
