Created by Richard Geoffroy — for twenty-eight years chef de cave at Dom Pérignon — who left Champagne to build a sake house in Shiraiwa, Toyama, and brought the blender's craft with him. Each release assembles around thirty-five separately brewed sakes across three rice varieties (Yamada Nishiki, Omachi, Gohyakumangoku) and five yeast strains. This is the fifth annual assemblage.
Aroma: Floral and layered, with gentle orchard fruit.
Palate: Complex and textured — umami through the middle, quietly structured.
Finish: Long and composed.
This is not sake built on one perfect brew.
It's for drinkers who want the blender's art — where Champagne thinking meets Toyama rice.
