Distilled at Suntory's Hakushu Distillery, set in dense forest at the foot of the Japanese Southern Alps, this is the greenest of Japan's great single malts. Soft mountain water and a light touch of peat give it a clarity that sets it apart from its richer sibling at Yamazaki — twelve years in oak adds depth without ever weighing it down.
Aroma: Fresh green apple, mint leaf and cut herbs, with a wisp of smoke behind.
Palate: Crisp pear and citrus, soft malt sweetness, gentle peat threading through.
Finish: Clean and drying, with a green tea bitterness that lingers.
This is not a whisky built on richness.
