Brewed by Kikkawa Jozo (吉川醸造) at the foot of Mt. Afuri in Kanagawa Prefecture, Afuri Mizumoto (雨降 水酛仕込) is made using the ancient Mizumoto (water-starter) technique — a natural fermentation method that predates the kimoto and sokujo styles. This slow, wild-fermented process produces sake with gentle lactic acidity, layered umami, and remarkable mineral purity.
Crafted from the luxurious Aiyama rice (愛山), polished to 65 %, and bottled as an unpasteurised, undiluted Nama Genshu, it showcases a beautiful harmony between freshness and depth. With only 13 % ABV, it’s light yet full-flavoured — offering aromas of green apple, pear, yogurt, and steamed rice, followed by a clean, elegant finish.
