Brewed by Kikkawa Jozo at the foot of Mt. Afuri in Kanagawa Prefecture, this is a modern Junmai Ginjo built around clarity, fruit and drinkability. Made with Kanagawa-grown sake rice polished to 60%, it uses a distinctive fermentation approach that gives the sake its lively, cider-like edge while keeping the finish clean and controlled.
The palate is soft, bright and full of energy. Green apple leads, pear and citrus zest follow, and the acidity gives it a crisp line that keeps everything fresh rather than sweet. It has the kind of modern, fruit-forward shape that makes it just as appealing to newer sake drinkers as it is to regulars.
At 9% ABV, it stays light, refreshing and incredibly easy to pour.
